Meanwhile, when Šarūnas is preparing veal, one of his favorite dishes, he says: ‘My soul sings when I know that guests are coming to taste this dish.’ Working together, both chefs subscribe to a ‘nose to tail’ approach to their work, and try to apply all the principles of sustainable cuisine.

What about the restaurant’s team? The River Town restaurant is still relatively young, but the team that welcomes and says goodbye to its guests every day are professionals with more than ten years’ experience in the hospitality business.
‘At the moment we have about twenty to thirty regular guests who come at least two or three times a month, and that’s the greatest sign of appreciation for us, because River Town has become a restaurant that people want to return to, thanks to all the work we have put in.’
